Order of operations has us squaring the binomial $(x-h)$ before multiplying the number in front of it. Thus, working in the other direction, that number has to be factored out before the binomial can be "un-squared". | |

Either they come up with a method that also works, or their failure to do so demonstrates the reason why you taught it that way. | |
